Non Concealed Knives

Would anyone know if it is legal to OC a knife (let alone 2) that has a 7-8 in blade even if you have a CCDW?  I am not asking for myself, I would rather trust my pistol against a knife in a fight anyday.  I just happened to see a guy wearing 2, 1 on each hip at 3 and 9.  Looked assanine (excuse my language and spelling) to me.

Can you carry a concealed pocket knife larger then 3 inches with a CCW?

Anyone know if a folding pocket knife with an assisted blade is considered a switch blade or not??

Just getting into knives and I want to know what I can and can't carry.

I collect, sell and am really into knives. Spring assisted knives are not switchblades, but sometimes there is some confusion even among law enforcement. I know many people who carry spring assists without issue. As I understand it a ccdw does allow you to carry a knife over 3 inches or many of us are in real trouble.
